Shaken, not stirred.

James Bondin 50v. synttäreiden kunniaksi tuli tehtyä ravistettua salaattia :) Itseasiassa tämä tekisi miehelle todella hyvää kaiken sen epäterveellisen ruuan ja alkoholin jälkeen...

Niin ja kyllä, olen erittäin suuri Bond-fani! =D

Innostun myös helposti haasteista ja silloin mielikuvitus lähteekin usein hyvin innovatiivisille urille. Ankerias Vipusen mysteeriboxin innoittamana tuli siis seuraavat herkut taiteiltua. Salaatista saa kahdelle henkilölle kevyen lounaan tai neljälle illallisen alkupalat. Kyytipojaksi suosittelen martinin sijaan kuivaa valkoviiniä ;)

Ravisteltua parsakaalia raikkauden kera
(suosittelen käyttämään vain luomuaineksia)
  • 1 parsakaalin kukinnot (säästä varsi esim. sosekeittoon)
  • n. 5 cm pala purjoa
  • 1 valkosipulin kynsi
  • 1 rkl seesamiöljyä
  • ruususuolaa & rouhittua mustapippuria
  • 0.5 dl kuorittuja hampunsiemeniä tai muita siemeniä
  • 1 appelsiini
  • 1 kotimainen omena
  • kirsikkatomaatteja
Viipaloi parsakaalin kukinnot ja purjo sopivan ohuiksi suupaloiksi. Silppua valkosipuli hyvin hienoksi tai käytä puserrinta. Yhdistä parsa, purjo, valkosipuli ja öljy kannellisessa muovirasiassa ja lisää suolaa ja pippuria maun mukaan. Ravistele voimakkaasti muutaman minuutin ajan, niin että parsa hieman pehmenee.

Kuori appelsiini kalvottomaksi ja leikkaa ohuiksi siivuiksi. Viipaloi myös omena ja lohko tomaatit. Sekoita parsakaalin joukkoon siemenet, appelsiini ja omena ja sekoita hyvin. Anna maustua huoneenlämmössä hetki ennen tarjoilua. Jaa lautasille, koristele tomaateilla ja tarjoa esim. suppisnäkkärin kera.

(Meinasin tehdä salaatille myös kastikkeen appelsiinimehusta ja kookoskermasta, mutta ei se tarvinnutkaan sitä. Olisi ollut vain liikaa, sillä paloiteltu appelsiini mehusti salaattia täydellisesti!)

Suppisnäkkäri
2 isohkoa levyä
  • 2.5 dl idätettyä vehnää
  • 1 dl pellavansiemeniä + 3 dl vettä
  • 3 - 4 dl suppilovahveroita
  • 2 tl timjamia
  • 2 tl rosmariinia
  • 0.5 tl suolaa
  • 2 rkl oluthiivahiutaleita
Tehosekoita idätetty vehnä hienoksi massaksi. Sekoita joukkoon pellavansiemenet sekä vesi ja anna turvota pari tuntia. Hienonna suppilovahverot pienemmiksi paloiksi ja lisää loppujen aineksia kera vehnäsoseeseen ja anna turvota vielä hetki.

Levitä massa ohuelti leivinpaperille ja kuivata kasvikuivurissa tai 40 asteisessa uunissa täysin rapeaksi. Itsellä kesti kasvikuivurissa noin 14 tuntia valmistua.
Käyttämäni tomaatit oli muuten omaa tuotantoa!

For the James Bond's 50th Anniversary something bit more healthier shaken... ;)

Shaken broccoli with freshness
(I recommend to use only organic ingredients)
  • flower head of 1 broccoli (save the stalk e.g. to soup)
  • about 5 cm piece of leek
  • 1 clove of garlic 
  • 1 tbsp sesame oil
  • rose salt & ground black pepper
  • 0.5 dl shelled hemp seeds or other seeds
  • 1 orange
  • 1 apple
  • cherry tomatoes

Cut the broccoli heads and leek into thin bite-size pieces. Chop the garlic very finely. Combine broccoli, leek, garlic and oil in a plastic box with a lid and add salt and pepper to taste. Shake vigorously for a few minutes, so that the broccoli pieces slightly softens.

Peel the orange skinless and cut into thin slices. Cut the apple into thin slices and tomatoes into wedges. Add the seeds, orange and apple to the broccoli mixture and stir well. Let the salad stand and marinade at room temperature for a while before serving. Share it to serving bowls, garnish with tomatoes and offer e.g. with mushroom crispbread

(I was going to make a salad dressing out of orange juice and coconut cream, but in the end the salad just didn't need it. Dressing would've been just too much, as the orange pieces gave enough juice to the salad!)



Mushroom crispbread
  • 2.5 dl sprouted wheat 
  • 1 dl flax seeds + 3 dl water
  • 3 - 4 dl Funnel Chanterelle
  • 2 tsp thyme
  • 2 tsp rosemary
  • 0.5 tsp salt
  • 2 tbsp nutritional yeast
Mix the wheat into fine puree. Stir in the flax seeds and water and let stand for a couple of hours. Chop the mushrooms into smaller pieces and add them with the remaining ingredients to the wheat mixture and let stand for a moment.

Spread the dough on a baking sheet and dry in a dehydrator or in a 40 ° C oven until completely crisp. I used my dehydrator and it took about 14 hours.

Raw weekend

Last weekend I attended a karate seminar in Joensuu, Finland. At the same time I experimented how does it go to have heavy trainings and only eat raw food... Well it went perfectly fine! In three days I had 7 x 1.5h trainings (+ plenty of overtime!) and I never felt too tired or even too hungry! I think I had even much more energy than when I've eaten warm food before trainings. So now I'd like to share with you some of the food recipes which I used there. I had my new personal blender with me so that it got properly tested before the big trip.

I'd also love to tell about the seminar itself, but I guess not many of you readers know much about karate, so I spare you from that :) Just want to say that it was definitely the best so far and Sensei Bob Nash is the greatest teacher ever! :D Looking forward to meet him again...

All recipes are for one person and I only used raw and organic ingredients.

Morning smoothie
  • 1 grapefruit
  • big bunch of lettuce or spinach
  • 1/2 banana
  • water
Put all ingredients to a mixer and mix until very smooth. Add desired amount of water.

I recommend to drink this first and after about 30min. enjoy the rest of the breakfast. This sort of smooth/slow start is good for the digestion.

Chocolate oatmeal
  • 4 dried plums or dates
  • 1 dl rolled oats
  • about 2 dl water
  • 1 tbsp hemp seeds or soaked sunflower seeds
  • 1/2 banana
  • 2 tsp cacao powder
  • (1 tsp of each: maca, lucuma and soy lesithin)
In the evening put the plums, rolled oats and water to a mixer and let soak over night. In the morning add the rest of the ingredients to the mixer and mix until smooth. Enjoy for example with blueberries.
This picture was taken on our Lapland trip. This really is my favourite raw oatmeal recipe!

Tomato soup
  • 2 sundried tomatoes (preferably not in oil!) + 1 dl water (soak 2-4h)
  • 1 tbsp pumpkin seeds (soak 2-4h and rinse well!)
  • 3 big tomatoes
  • 1/2 onion
  • about 1 dl of peeled and diced zucchini
  • 1-2 tsp spice mixture which contains pepper, paprika, coriander, mustard seeds and garlic

Put all ingredients to a mixer and mix until smooth. Add more water if needed.
To get variations... Use hemp seeds (no need to soak) instead of pumpkin seeds to make more creamier soup. Use bell peppers instead of zucchini and experiment with different kind of spices. To get more filling soup add some boiled chickpeas or other peas (semi raw soup).

Energy balls
  • 3 dl walnuts (preferably soaked and dried)
  • 1 dl coconut flour
  • 2 tbsp cacao powder
  • 2 tbsp melted coconut oil
  • 2 tbsp date syrup or maple syrup
Put the walnuts into a coffee grinder or good mixer and mix until almost butter. Put the walnut butter and the other ingredients into a bowl and mix until a smooth dough. (I just use my hands!) Roll the dough into bite size balls. These do survive in room temperature for few days, but I recommend to store them in a fridge.

Grated salad
  • 2 carrots
  • 1 small turnip
  • 1 apple
  • raisins & soaked sunflower seeds or other seeds
  • canola oil & lemon juice
Peel and grate the carrots, turnip and the apple. Add some raisins and seeds and sprinkle over some oil and lemon juice. Mix well and let marinade for a moment in room temperature. Enjoy and remember to chew well! :)

Hempeät pikkukakkuset / Sweet little cakes

Päätin pitkästä aikaa osallistua blogien väliseen ruokahaasteeseen, sillä tällä kertaa aihe on täydellisesti minulle sopiva! Elokuun ruokahaasteen voitti Chocochilin Elina ja hän keksi laittaa syyskuun aiheeksi vegaanisen ruuan. Mikäs sen helpompi aihe minulle ja ruokalaji saa vielä olla mikä tahansa! Halusin kuitenkin tehdä jotain, mikä sopii helposti myös muillekin kuin vain vegaaneille ja koska suuri herkuttelija olen, niin tietenkin jälkiruokaan kallistuin. Ruuan piti olla myös tarpeeksi helppo valmistaa, niin (raa'an/vegaanin ruuan) epäilijät eivät heti säikähdä! :)

Saanko siis esitellä taivaalliset pikkukakkuseni! Nämä sopivat vegaanien lisäksi myös keliaakikoille, raakaruokailijoille (jos käytät täysin raakoja aineksia), diabeetikoille, sekä pähkinäallergisille ja myös karppaajille (ainakin oman tietämykseni mukaan). Kaikkia aineksia löytyy helposti lähes kaikista kaupoista eli mitään hifistelyä resepti ei sisällä!

Kookossoseeni teen itse kookoshiutaleista. Jauhan siis hiutaleita pienen kookosöljymäärän kanssa tehosekoittimessa niin kauan, että muuttuu soseeksi (200g hiutaleita + 1rkl öljyä = n. 2,5dl sosetta). Joistain erikoiskaupoista saa myös valmista sosetta, mutta se on aika hintavaa.

Vaihtelua kakkuihin saa käyttämällä esim. mansikoiden sijaan muita mieleisiä marjoja tai hedelmiä. Banaanin korvaamista en voi suositella, koska sillä on olennainen osa kakun samettisessa rakenteessa, mutta kookossoseen sijaan voi käyttää kookoskermaa tai muuta kasviskermaa jos haluaa mousse-jälkiruuan. Suklaaosaan voi laittaa hieman vahvaa kahvia tai pikakahvijauhetta ja kookossoseen sijasta voi käyttää esim. maapähkinävoita. Vain mielikuvitus on rajana! :D


Lime-mansikka-suklaa-pikkukakkuset
n. 6:lle

Limekerros:
  • 0.5 dl kookossosetta
  • 1 banaani (100g)
  • 2 rkl limemehua
  • 1 rkl agavenektaria
  • 0.5 tl vaniljajauhetta
Mansikkakerros:
  • 0.5 dl kookossosetta
  • 1 banaani
  • 100g mansikoita
Suklaakerros:
  • 0.5 dl kookossosetta
  • 1 banaani
  • 1 rkl kaakaojauhetta
  • 0.5 tl vaniljajauhetta

Sekoita jokaisen taikinakerroksen ainekset erikseen tehosekoittimessa sileäksi massaksi. Kaada kerroksittain pieniin leivosvuokiin tai yhteen isompaan kakkuvuokaan. Itse käytin silikonisia leivosvuokia.

Laita jääkaappiin tai pakastimeen jähmettymään ennen tarjoilua. Säilytä jääkaapissa! Tätä on helppo tehdä vierasvaraksi myös pakkaseen, ota vain huonelämpöön sulamaan n. 20min ennen tarjoamista.

Lisukkeeksi sopii kaikenlaiset marjat ja hedelmät tai niistä tehdyt kastikkeet, sekä tietenkin suklaa! :)

Finnish blog writers have every month a food challenge and this month it was about vegan food. So that was an excellent topic for me and I decided to take part in it. Because I'm a huge fan of delicacies I wanted to make a dessert and also wanted to make something that is suitable for many others, not just vegans. These cakes are suitable for celiacs, diabetics, raw foodists, nut allergists and low carb diets (as far as I know). The recipe is also made as simple as possible so the skeptics (for vegan or raw food) won't be instantly scared away!

The coconut puree I make myself. I just blend coconut flakes with some coconut oil until it turns into smooth puree (200g flakes + 1tbsp oil = 2.5dl puree). Some shops also sell ready coconut puree, but it's often rather expensive.

To get some variation in cakes you can use other berries or fruits instead of strawberries. I can't recommend replacing the bananas 'cos they give the nice velvety structure. If you want a mousse type of dessert you can switch the coconut puree to coconut cream or other vegetable cream. Into the chocolate layer you can also add some strong coffee or instant coffee powder and coconut puree can be replaced e.g. with peanut butter. Just use your imagination! :D 


Lime-strawberry-chocolate cakes

Mousse
abt. 6 pcs
Lime layer: 
  • 0.5 dl coconut puree
  • 1 banana (100g)
  • 2 tbsp lime juice
  • 1 tbsp agavesyrup
  • 0.5 tsp vanilla powder
Strawberry layer:
  • 0.5 dl coconut puree
  • 1 banana
  • 100g strawberries
Chocolate layer:
  • 0.5 dl coconut puree
  • 1 banana
  • 1 tbsp cocoa powder
  • 0.5 tsp vanilla powder

Mix the ingredients of each layer separately in a blender until very smooth. Pour each layer seperately into small cake molds or into one larger cake mold. I used silicone molds.

Put into refrigerator or freezer to solidify before serving. Store in a refrigerator! This is also very easy to do into freezer in case of surprise guests, just take to room temperature to melt approx 20min before serving.

Serve with berries or fruits or with sauces made ​​from these materials. Chocolate suits also very well with these cakes! :)
